10:30 - 12:30: Personalised nutrition: data-driven consumer trends


Thomas Hayes, based out of Lux Research’s Singapore office, is an Analyst on the Emerging Ecosystems in Agrifood and Health team, specializing in food and nutrition.  Before joining the Emerging Ecosystems in Agrifood and Health team, Thomas was a member of the Consulting team where he conducted project-based, deep-dive analyses for clients, largely within the food industry. Prior to joining Lux Research, Thomas was a Research Associate at Cambridge Polymer Group where he conducted materials consultation, R&D, and analytical testing for numerous clients. Thomas received his B.S. in Chemical Engineering from Northeastern University and is a Master of Business and Science (MBS) candidate at Rutgers University, concentrating in Global Food Technology & Innovation.



Mr. Sandeep Gupta, Passion Man is a Nutraceutical Evangelist & Strategist, Influencer, Global Speaker, Panelist, Chief Mentor, Executive Coach & Eminent Personality of Nutrition & Nutraceutical Industry. He is a Pharmaceutical Graduate and Masters in Business Administration, currently associated as distinguished Member of Leadership Excellence at Harvard Square, USA. In his recent endeavors, he has been coached by John Mattone (who also coached Steve Jobs then), USA and is also a certified Intelligent Leadership Coach.Mr. Gupta holds expertise with Self-Leadership, Servant Leadership and Intelligent Leadership Practices in his career and his interest lies in mentoring passionate & budding youngsters in nascent days of their career with the ambition of “Catch Them Young, Catch Them with Passion”. Today he holds the most influential network and affiliations with Senior Executives, Scientists, Expats of Industry & Institutes, Authors and Executive Coaches in India and Globally.


Celine Klotz - After studying bioengineering at the University of Nice Sophia-Antipolis and specialized in biomimetism she has joined JAAN to develop Health solutions and to manage clinical trials. She is based in the JAAN laboratories in Tokyo. Her main area of interest today is gene expression of chronic inflammation and liver protection.

Carolyn Stephen joined FIRC in 2017 as a Nutritionist. Her area of work includes concept generation and product development for new nutrition based food products according to current local and global nutritional trends. She also provides essential product labelling consultancy to ensure labels meet regulatory requirements for local and overseas markets.Carolyn has over a decade of experience in human nutrition. Over her career, she had provided services in areas of sports nutrition, nutrition education and training, nutrition assessment and dietary consultations. She also has 5 years of lecturing experience in nutrition and food science as well as curriculum development.Carolyn holds a Bachelor of Science degree in Human Nutrition from the University of Otago, New Zealand.


Dr. Chin-Kun Wang, is the current President of the International Society for Nutraceuticals and Functional Foods, ambassador of Global Harmonization Initiative, and also a distinguished professor in Chung Shan Medical University, Taiwan. Dr. Wang was the former president of Chung Shan Medical University and also president of Nutrition Society of Taiwan. He was awarded national biomedical development and Who's Who in the world over the past years.


13:30 - 16:30 - Digestive health: the science behind your gut


Dr. Chyn Boon Wong joined Morinaga Milk Industry in 2016 and has worked in probiotics research and development. Her main research activities are focused on scientific substantiation of health benefits of bifidobacteria as probiotics, including the design and execution of projects related to the basic and functional aspects of bifidobacteria. She received B. Sc. degree with honours in Microbiology in 2011 from the University of Putra Malaysia, and PhD from Universiti Sains Malaysia in 2016, specialising in the development of lactic acid bacteria and their bioactive molecules as neutraceuticals. She has been the recipient of USM Fellowship in Universiti Sains Malaysia and the Regional Bio-Asia Program in Institute for Agricultural Research (INRA), Angers-Nantes, France.


Dr. Lin Jing is a research fellow in A/P LIU Shaoquan’s research group in the Food Science and Technology programme, National University of Singapore (NUS). Her doctoral research focused on the development
of functional bakery products fortified with phenolic compounds and the evaluation of their nutritional and sensory properties. She is currently involved in the development and commercialization of the okara-based functional drink and ingredient.

10:30 - 12:30 - Sports and fitness nutrition: tailoring diets for improved performance


Deepak Gunvante has had the opportunity to improve lives of over a billion consumers through Innovation of Foods & Nutrition brands that he had been associated with during the last 3 decades of his R&D/corporate life.

He started his career with Unilever (12 years), in R&D, spanning Foods Product development, Quality & commissioning state-of-art Ice cream plant in Nasik, India. Subsequently, he joined GSK Consumer Healthcare (17 years), where he was Heading the India R&D between 2009 and 2012 enabling the business to double their growth through series of impactful Innovations. He went on to Head the Family Nutrition global R&D category for GSK in Singapore. He also worked with General Mills for a year as Head of Innovation, Technology, Quality for Asia, Middle East & Africa region. Recently, he has moved into consulting as CEO & Managing Consultant for DG Associates Pte. Ltd. in Singapore & represents Atlantia Food Clinical Trials Group, Ireland as Business Development Director for Asia Pacific region.


Dilip Ghosh has received his PhD from India. He is an international speaker, facilitator and author and professionally associated with Nutriconnect, Soho Flordis International, Australia; Honorary Ambassador, Global Harmonization Initiatives (GHI). He is a fellow of American College of Nutrition (ACN), professional member of Australian Institute of Food Science & Technology (AIFST), an advisor and executive board member of Health Foods and Dietary Supplements Association (HADSA), India and also in editorial board of several journals. Dr. Ghosh has published more than 90 papers in peer reviewed journals, numerous articles in food and nutrition magazines and books. His recent book, Pharmaceuticals to Nutraceuticals: A shift in disease prevention under CRC Press, USA has been published in 2016.


Dr. Stephen Burns is an Associate Professor within Physical Education and Sports Science at the National Institute of

Education of Nanyang Technological University (NTU).  He holds a PhD in Exercise Physiology from Loughborough University in the UK and previously held posts at the University of Texas at El Paso and the Children’s Hospital of Pittsburgh in the US before coming to NTU.  Much of his research examines how fat metabolism is affected by exercise for both health and performance.  He is engaged in research collaborations with individuals in universities within Asia, Europe and the US and works with industry partners.  He serves on the Editorial Board for the International Journal of Obesity and the Journal of Exercise Science & Fitness.

Michelle Teodoro is a Food Science and Nutrition Analyst at Mintel, specialisingin food science and ingredients, with a focus on nutrition. As part of herrole, she is responsible for analysing and providing insights on health,diet and nutrition trends, regulations, and food science advances.Michelle brings over five years of experience in the food and nutrition industry.Equipped with a wealth of food science and nutrition knowledge, she iscurrently a Food Science and Nutrition Analyst at Mintel, specialising in foodscience and ingredients.


Dr Heng Kiang Soon holds a PhD in Nutritional Science. His research interest has been on obesity and metabolic syndrome. Currently he is a lecturer at the School of Applied Science, Republic Polytechnic, Singapore. His research focus is on the formulation of nutraceuticals and functional foods with effective health promoting and therapeutic effects. He has been providing research and development consultancy to food companies. As a nutritionist, he is also passionate in promoting healthy diet and nutrition to the public. He was featured in media including Channel News Asia, Radio Capital 958, The Straits Time, Business Insider and Lianhe Zhaobao.


Silvia Trudda holds a Univesity Degree as Agronomist from Universitá di Sassari (Italy), with specialization in Food Technology. Participating in Studies about new analytical models for detection of sensorial characterization of Food products at Institut National Agronomique of Paris, France. Master in Commercial Direction and Marketing Management at ESIC Madrid, Spain. Since 1999 Technical and Commercial Manager for Food Industry. Since 2006 Food Department Director at Massó Group, based at Barcelona, Spain, being Resposable of Businesss developpement and Sales Worldwide.


David Foreman is a pharmacist, author and media personality known to consumers internationally as, The Herbal Pharmacist. His background in both pharmacy and natural medicine put Foreman in an elite class of health experts who can teach integrative medicine practices. Foreman is also a formulator, U.S. patent holder, science-engineer and consults for numerous global companies helping to bridge the gap between science and sales. Foreman is a graduate of the University of South Carolina College of Pharmacy, currently serves on Organic & Natural Health Association’s Scientific Advisory Board and is author of, Pillars of Health: Heart Disease.
